Roasted Cacao Beans
The chemical processes during this stage are what gives chocolate its distinctive flavor. Unfermented cacao can be bitter and very tannic.
Sun-drying not only evaporates the water in the bean which concentrates the flavor, it also reduces any bitterness. Allowing the beans to dry slowly in the sun is a crucial step in determining the quality of the cacao beans.
The husks are more easily removed when the beans are roasted, the beans are sterilized from bacteria and mold and the vinegar smell is removed. It is this step that concentrates the flavors in the bean and gives them their distinctive, rich chocolate flavor.

Tempering chocolate with the sousvid method
What is Temperaing?
The more general point of tempering is being able to melt chocolate down and reform it back into a solid of any shape properly.
Tempering is about getting proper crystal formation in your chocolate. If you let it get too hot, or cool too low, the wrong crystals will form and your chocolate will have a low melting temp, won't snap properly, and will be dull.
SousVide is a food-packaging technique whereby vacuum-packed food pouches are submerged within a bath of precise water temperature for a precise time. At the end of this time, results that are impossible to achieve through any other method become possible.

Grinding is the process by which cocoa nibs are ground into " cocoa liquor", which is also known as unsweetened chocolate or cocoa mass. The grinding process generates heat and the dry granular consistency of the cocoa nib is then turned into a liquid as the high amount of fat contained in the nib melts. The cocoa liquor is mixed with cocoa butter and sugar.

Most Americans are used to sugary, processed dutch cocoa. But I know how horrible processed foods and sugar are for our health, and how damaging it can be for our minds and bodies in the long run.Cacao is natural, healthy and delicious, but it's something you have to get used to. It's not particularly sweet like chocolate bars.
I make colored chocolates and this Kit is my 'go to' for round chocolates. The mold It is extremely sturdy and my chocolates come out perfect every time. It's a little bit of a challenge to clean it (most of the time I run it through the dishwasher) and sometimes I have to clean out the color by hand washing it but other than that, I love it!
This stuff is really good for making treats to fit into several different diet types (keto,paleo, gluten- free, etc).It tastes so good on it's own and has the melt-in-your-mouth buttery feel. It's the same taste as cacao nibs, I'd say. I personally have only used Erythitol to sweeten it and though it's amazing, I personally didn't think it tasted like white chocolate. I eat 90% raw food, so I am very familiar with raw products and have a lot of experience using them. I have tried several Cacao powder brands and liked each of them but found them a little expensive for the amount I was getting.
